Come on it can’t always be about roofing!

RAINBOW is not only to be remembered when it comes to your roof… it also happens to be the name of a delicious and popular dish… Rainbow Trout and done properly it is as memorable as the peace of mind you experienced after that last roof leak was repaired.

Try this recipe tonight and enjoy under your safe and dry roof!

 

Serves 2

 

  • 2 trout fillets

  • coarse salt and freshly ground pepper

  • olive oil

  • handful of coarsely chopped almonds

  • handful flat parsley coarsely chopped

  • zest and juice of 1 lemon

Place a tiny bit of oil in a large skillet and roll it around until it is covered. Place over med-hi heat. Season the trout with salt and pepper and carefully place in the skillet skin side up. Reduce heat and cook until the underside is golden brown (approx 5 min.). Flip fish with care using whatever tools and techniques you are most adept. Cook until fish is flaky in the center when tested with a fork. Wipe out skillet and oil and almonds, cook over medium heat stirring until almonds turn golden (1 min) Remove from heat add parsley and lemon zest to combine. Then add lemon juice and stir, when it begins to bubble pour over fish and ENJOY!
